The Essentials

Here's what you need before you get brewing.

Espresso machine

Coffee Grinder

Scale

Timer

Tamper & Tampingmat

Knockbox

Brush

3 Cloths

1 for portafilter, 1 for driptray, 1 for countertop

Coffee

Grind

Step 1

  • Place a clean portafilter on the scale and set it to zero.

  • Grind the desired amount of coffee.

  • Check the dosed coffee weight on scale.

Grind

Step 2

  • Brew an espresso and stop the extraction at desired amount of espresso.

  • Check the extraction time.

Grind

Step 3

  • Change the grind if necessary:

    • Did the espresso run too fast? (less than 20 seconds) → grind finer.

    • Did the espresso run too slow? (over 30 seconds) → grind coarser.

  • Grind and discard a full filter basket of coffee (at the original grind setting).

  • Repeat from step one until you’ve reached the right grind setting/extraction time.

Grind

"The perfect grind depends on the bean, the roast, the grind settings; sometimes even the time of day and how warm your machine is."

Barista Notes

Only move the grind setting in small steps to ensure you don't block the grinder or go past the desired setting.
